The poncho has a thick knitted rib roll collar and a small (optional) fringe. The honeycomb texture is created by using 2 contrasting thin yarns (UK 4ply) in an easy slip stitch patterning. You could use one slightly thicker yarn for a plain colour effect.
The hat is called a beret but is closer to a “beanie” in shape. It can easily be made more “beret shaped” by making more increases and then decreases, before finishing the top.
